2 large eggs
1/3 to 1/2 cup quick oats or oat flour
Instructions
1. Mash the bananas in a bowl until mostly smooth.
2. Add eggs and whisk together until combined.
3. Stir in the oats or oat flour. Let sit briefly.
4. Heat a skillet over medium-low heat and lightly grease.
5. Spoon small rounds of batter into the pan.
6. Cook 2–3 minutes until bubbles form, then flip.
7. Cook another 1–2 minutes until golden brown.
8. Serve warm with syrup, fruit, or yogurt.
