Ingredients
2 pounds Russet or Yukon Gold potatoes, peeled and chopped
4 cups chicken or vegetable broth
1 cup milk or heavy cream
Salt and pepper, to taste
Instructions
1. Peel and chop the potatoes into small, even cubes.
2. Add them to a large pot with the broth and bring to a boil over medium-high heat.
3. Reduce heat and simmer until the potatoes are fork-tender, about 15–20 minutes.
4. Mash the potatoes in the pot until you reach your preferred consistency.
5. Pour in the milk or cream and stir until smooth and creamy.
6. Season to taste with salt and pepper.
7. Serve warm with optional toppings like chives, cheddar, or bacon.
Notes
For dairy-free versions, use unsweetened oat milk or coconut milk.
To thicken the soup more, mash thoroughly or use an immersion blender.
