Description

This Apple Crumble Cheesecake blends creamy cheesecake, spiced apple filling, a buttery graham cracker crust, and a golden crumble topping perfect for cozy fall desserts, holidays, or any time of year.

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2 tbsp granulated sugar
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 3 medium apples, peeled and diced
  • 1/3 cup brown sugar
  • 1 tsp cinnamon
  • 2 tbsp cornstarch
  • 2 tbsp water
  • 1 tbsp lemon juice
  • 3/4 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 tsp cinnamon
  • 1/2 cup cold unsalted butter, cubed

Instructions

  1. Preheat oven to 325°F (160°C). Line a 9-inch springform pan with parchment paper.
  2. Make the crust: Combine graham cracker crumbs, melted butter, and sugar until it resembles wet sand. Press firmly into the pan’s base and bake for 10 minutes. Cool.
  3. Cheesecake layer: Beat softened cream cheese until very smooth, add sugar and vanilla. Mix eggs in one at a time. Fold in sour cream. Pour mixture over crust and smooth the top.
  4. Apple filling: In a saucepan, cook diced apples with brown sugar, cinnamon, lemon juice, and water until juices release. Stir in cornstarch slurry and cook until thick and jammy. Cool slightly.
  5. Crumble topping: Blend flour, brown sugar, cinnamon, and cold butter with a pastry cutter or fingertips until it forms coarse crumbs.
  6. Assemble: Spread cheesecake layer over crust, spoon apples on top, then scatter crumble over everything.
  7. Bake for 55–65 minutes. Center should jiggle slightly but edges set. Cool gradually with oven door open for 1 hour, then chill in fridge for at least 4 hours or overnight.

Notes

Serve chilled with caramel drizzle or whipped cream. Store covered in the fridge for up to 5 days, or freeze individual slices up to 2 months.
