Description

These homemade banana oatmeal bars are soft, naturally sweetened, and made with just a few wholesome ingredients. Perfect for busy mornings or a healthy snack, they’re freezer-friendly and totally kid-approved.


Ingredients

1 cup mashed overripe bananas (about 2 medium)

1 ¾ cups old-fashioned rolled oats

½ cup nut butter (peanut, almond, or sunflower)

1 tsp vanilla extract

1 tbsp ground flaxseed (optional)

1 tsp cinnamon (optional)

½ tsp baking powder

½ cup optional add-ins (chocolate chips, chopped nuts, etc.)


Instructions

1. Preheat oven to 350°F (175°C). Line an 8×8-inch pan with parchment.

2. Mash bananas in a large bowl until mostly smooth.

3. Add nut butter and vanilla. Stir until well combined.

4. Add oats, flax, cinnamon, baking powder, and optional mix-ins.

5. Mix until fully combined with no dry spots.

6. Spread the batter into the prepared pan and level with a spatula.

7. Bake for 20–22 minutes or until edges are golden and center is set.

8. Let cool completely in the pan before slicing into bars.

9. Store in the fridge or freeze for later.

Notes

Use extra ripe bananas for the best flavor and texture.

Feel free to adjust spices or add-ins to suit your taste.

For a nut-free version, use sunflower seed butter.
