Description

Deliciously healthy muffins made with ripe bananas and rolled oats, perfect for breakfast or a snack.


Ingredients

  • 2 ripe bananas
  • 1 cup rolled oats
  • 1/4 cup maple syrup (optional)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup milk (or non-dairy milk)
  • 1/2 cup chocolate chips or blueberries (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a large bowl, mash the ripe bananas.
  3. Add in the rolled oats, maple syrup, baking powder, baking soda, salt, vanilla extract, and milk. Stir until combined.
  4. If using, fold in chocolate chips or blueberries.
  5. Divide the batter evenly among the muffin cups.
  6. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow to cool before removing from the tin. Enjoy your muffins!

Notes

Use very ripe bananas for the best natural sweetness and flavor. Store in an airtight container at room temperature for 2-3 days, or refrigerate for a week.
