Description

A vibrant fruit salad combining fresh watermelon and seasonal berries with a citrus-infused dressing for a refreshing treat.

Ingredients

Scale
  • 3 C cubed watermelon (½” cubes)
  • 1.5 C quartered strawberries
  • 1 C blueberries
  • 1 C blackberries
  • ¼ C thinly sliced fresh mint
  • 2 Tbsp honey (or agave for a vegan option)
  • 1 Tbsp fresh lime juice
  • 1 tsp grated lime zest
  • 1 Tbsp extra virgin olive oil

Instructions

  1. Combine the cubed watermelon, quartered strawberries, blueberries, and blackberries gently in a large mixing bowl.
  2. Sprinkle the thinly sliced fresh mint over the top of the fruit mixture to distribute the aroma.
  3. Whisk together the honey, lime juice, lime zest, and olive oil in a separate bowl until emulsified.
  4. Drizzle the dressing carefully over the fruit and mint.
  5. Toss the mixture very gently to avoid bursting or mushing the delicate berries.
  6. Serve immediately for the best texture and flavor.

Notes

To improve flavor distribution, zest your lime directly into the dressing. For a savory twist, add a pinch of chili lime seasoning or swap mint for basil.
