Description

Ingredients

2 large eggs

Instructions

1. In a medium bowl, whisk together the flour, cocoa powder, baking powder, baking soda (if using), and salt. Set aside.

2. In a large bowl, beat the sugar with oil or melted butter until smooth. Add eggs one at a time, then stir in vanilla.

3. Add the dry ingredients to the wet ingredients and mix on low speed until a thick, sticky dough forms.

4. Cover and refrigerate the dough for at least 2 hours, or up to overnight, until firm.

5. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.

6. Scoop out 1 tablespoon of dough, roll into balls, and coat generously in powdered sugar.

7. Place cookies on prepared sheets about 2 inches apart.

8. Bake for 10–12 minutes, until the tops crack and edges are set. Centers should still look slightly soft.

9. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Chill the dough thoroughly so the cookies don’t spread too much and crack beautifully.

Roll each ball in a thick, even layer of powdered sugar for the best crinkle look.
