- 1 cup cottage cheese
- 4 eggs
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract

Instructions
- In a blender, combine rolled oats, cottage cheese, eggs, baking powder, vanilla extract, and salt. Blend until smooth.
- Heat a non-stick skillet over medium heat and add butter or oil.
- Pour 1/4 cup of the batter for each pancake onto the skillet.
- Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
- Serve warm with maple syrup or fresh fruit.
