Description
These classic no bake oatmeal cookies are a chocolate-peanut butter dream soft, chewy, and perfect for summer when you want dessert without turning on the oven.
Ingredients
2 cups granulated sugar
1/2 cup milk (dairy or plant-based)
1/2 cup unsalted butter (1 stick)
1/4 cup unsweetened cocoa powder
3/4 cup creamy peanut butter
1 teaspoon vanilla extract
3 cups quick-cooking oats
Instructions
1. Line two large baking sheets with wax paper or parchment paper and set them aside.
2. In a medium saucepan, combine the sugar, milk, butter, and cocoa powder.
3. Heat over medium heat, stirring often, until smooth and butter is melted.
4. Bring the mixture to a rolling boil, stirring constantly.
5. Boil for exactly 1 minute use a timer.
6. Remove from heat immediately.
7. Stir in peanut butter and vanilla extract until creamy and smooth.
8. Add oats and mix until fully coated and combined.
9. Drop spoonfuls of the mixture onto the prepared sheets.
10. Let cookies set at room temperature for 20–30 minutes, or until firm.

• Use quick oats for best consistency; rolled oats will be chewier.
