Description

Delicious and healthy muffins packed with protein from cottage cheese and sweetness from blueberries, perfect for breakfast or snacks.


Ingredients

  • 1 cup cottage cheese
  • 1 cup blueberries
  • 2 eggs
  • 1/3 cup honey or sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 cup flour (whole wheat or all-purpose)
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with liners or grease it.
  2. In a mixing bowl, combine cottage cheese, eggs, honey, and vanilla extract. Mix until well blended.
  3. In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  5. Gently fold in the blueberries.
  6. Pour the batter into the prepared muffin tin, filling each cup about 2/3 full.
  7. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow the muffins to cool for a few minutes before transferring them to a wire rack.

Notes

Use fresh blueberries for the best flavor, but frozen blueberries work too. For added flavor, sprinkle in some cinnamon or nuts. Gently mix the batter to avoid dense muffins.
