Delicious muffins that combine sweet blueberries with creamy cheese, perfect for breakfast or dessert.

- 2 cups all-purpose flour
- 1/3 cup light brown sugar
- 1/2 cup granulated sugar
- 1/4 cup unsalted butter (melted)
- 1/4 cup vegetable oil
- 1 large egg
- 1/2 cup Greek yogurt
- 1 ½ cups fresh blueberries
- 6 oz cream cheese (room temperature)
- 3 tablespoons powdered sugar
Instructions
- Preheat your oven to 425°F and line a muffin pan with paper liners.
- Toss half of the blueberries with flour and set them aside.
- In one bowl, mix the dry ingredients: flour, baking powder, and salt. In another bowl, whisk together the wet ingredients: egg, sugars, yogurt, oil, and vanilla.
- Gently combine the wet and dry mixtures, then fold in the floured blueberries.
- Prepare the cream cheese filling by mixing the cream cheese with powdered sugar and vanilla until smooth.
- Fill each muffin liner with the batter. Add a spoonful of cream cheese filling, then top with the reserved blueberries.
- Bake in the oven at 350°F for 22–25 minutes, or until the tops are golden brown.
- Let the muffins cool slightly before serving.
Notes
Serve warm with extra butter. They can be stored in an airtight container for up to three days or frozen for three months.
