Description

Delightful cookies inspired by the classic Boston Cream Pie, filled with creamy vanilla and drizzled with chocolate.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, cream the butter and granulated sugar together until light and fluffy.
  4. Add the egg and vanilla extract, mixing until well combined.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Drop spoonfuls of dough onto the prepared baking sheet and bake for 10-12 minutes until the edges are firm.
  7. Allow cookies to cool.
  8. For the filling, whisk together heavy cream and powdered sugar until it forms soft peaks.
  9. Once cookies are cool, sandwich a dollop of vanilla cream between two cookies.
  10. Melt the chocolate chips and drizzle over the filled cookies to glaze.
