- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup heavy cream
- 1/2 cup powdered sugar
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, cream the butter and granulated sugar together until light and fluffy.
- Add the egg and vanilla extract, mixing until well combined.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Drop spoonfuls of dough onto the prepared baking sheet and bake for 10-12 minutes until the edges are firm.
- Allow cookies to cool.
- For the filling, whisk together heavy cream and powdered sugar until it forms soft peaks.
- Once cookies are cool, sandwich a dollop of vanilla cream between two cookies.
- Melt the chocolate chips and drizzle over the filled cookies to glaze.
