Budget-friendly and delicious Cheese Quesadillas that kids will love for their school lunches.
Ingredients

- 4 tortillas
- 2 cups shredded cheese (cheddar or mozzarella)
- 1 cup cooked chicken (optional)
- 1/2 cup bell peppers, chopped (optional)
- Salsa (for serving)
Instructions
- Heat a large skillet over medium heat.
- Place one tortilla in the skillet and sprinkle half of the cheese over it.
- Add chicken and bell peppers if using, then top with the remaining cheese.
- Place another tortilla on top and press down gently.
- Cook for 2-3 minutes or until the bottom is golden brown and the cheese has melted.
- Carefully flip the quesadilla and cook for another 2-3 minutes on the other side.
- Remove from heat and let cool for a minute before cutting into wedges.
Notes
Serve warm with salsa or guacamole. Can be packed with fresh fruit or veggie sticks.
