Description

Budget-friendly and delicious Cheese Quesadillas that kids will love for their school lunches.


Ingredients

Scale
  • 4 tortillas
  • 2 cups shredded cheese (cheddar or mozzarella)
  • 1 cup cooked chicken (optional)
  • 1/2 cup bell peppers, chopped (optional)
  • Salsa (for serving)

Instructions

  1. Heat a large skillet over medium heat.
  2. Place one tortilla in the skillet and sprinkle half of the cheese over it.
  3. Add chicken and bell peppers if using, then top with the remaining cheese.
  4. Place another tortilla on top and press down gently.
  5. Cook for 2-3 minutes or until the bottom is golden brown and the cheese has melted.
  6. Carefully flip the quesadilla and cook for another 2-3 minutes on the other side.
  7. Remove from heat and let cool for a minute before cutting into wedges.

Notes

Serve warm with salsa or guacamole. Can be packed with fresh fruit or veggie sticks.
