  • 2 cups chicken broth
  • 1 green bell pepper, chopped
  • 1 tablespoon Cajun spice mix
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Olive oil for cooking
  • Optional toppings: sour cream, green onions, cilantro

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the chopped onion and bell pepper, sauté until softened.
