Description

These chewy hot chocolate cookies taste like a mug of cocoa in cookie form. With rich chocolate, gooey marshmallows, and soft centers, they’re the ultimate winter treat.


Ingredients

Scale

1 cup unsalted butter, softened or melted

3/4 cup brown sugar

3/4 cup granulated sugar

2 large eggs

2 tsp vanilla extract

2 1/4 cups all-purpose flour

1/2 cup unsweetened cocoa powder

1/2 cup hot cocoa mix

1 tsp baking soda

1/2 tsp salt

12 large marshmallows or 1 1/2 cups mini marshmallows

1 cup chocolate chips or chunks (optional)


Instructions

1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.

2. In a large bowl, beat butter, brown sugar, and granulated sugar until smooth.

3. Add eggs and vanilla extract; mix until creamy.

4. In a separate bowl, whisk together flour, cocoa powder, hot cocoa mix, baking soda, and salt.

5. Gradually stir the dry mixture into the wet mixture to form a soft dough.

6. Fold in chocolate chips or chunks if using.

7. Scoop dough into balls and place them spaced apart on the baking sheet.

8. Bake for 8–10 minutes, until edges are set and centers look slightly soft.

9. In the last 2 minutes of baking, press a marshmallow (or a few mini ones) into the top of each cookie and bake briefly until puffed but not melted.

10. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Serve cookies slightly warm for gooey marshmallow centers.

Store in an airtight container for up to 4 days.

Add cinnamon and cayenne for a Mexican hot chocolate twist.
