- 1 onion
- 2 tablespoons olive oil
- 1 tablespoon fajita seasoning
- Salt and pepper to taste
- Cooked brown rice or quinoa
- Lime wedges for serving
- Fresh cilantro for garnish
Instructions
- Begin by slicing the chicken breasts into strips.
- Slice the bell pepper and onion into thin strips.
- In a large skillet, heat olive oil over medium-high heat.
- Add the chicken strips to the skillet and season with fajita seasoning, salt, and pepper. Cook until the chicken is no longer pink inside, about 5-7 minutes.
- Add the sliced bell pepper and onion to the skillet, and cook until they are soft, about 3-4 minutes.
- Prepare your meal prep bowls by placing a portion of cooked brown rice or quinoa at the bottom.
- Top with the chicken fajita mixture.
- Garnish with lime wedges and fresh cilantro.
- Allow to cool before sealing the bowls for meal prep.
