Description
This chicken tacos in crock pot with salsa recipe is easy, juicy, and loaded with flavor. Just a few ingredients, minimal prep, and a hands-off slow cooker method make this a go-to meal for busy nights.
Ingredients
1½ pounds boneless, skinless chicken breasts
1 (1.25-ounce) packet taco seasoning
1 (16-ounce) jar of your favorite salsa
Optional toppings: shredded lettuce, avocado slices, shredded cheese, chopped tomatoes, sour cream, lime wedges, tortilla shells
Instructions
1. Place the chicken in the bottom of your crock pot.
2. Sprinkle taco seasoning evenly over the chicken.
3. Pour the salsa over the top without stirring.
4. Cover and cook on LOW for 6–8 hours or HIGH for 4 hours.
5. Shred the chicken with two forks right in the pot.
6. Stir everything together to coat the meat with the salsa sauce.
7. Serve in tortillas with your favorite toppings.
Notes
Use chicken thighs for added juiciness.
You can swap red salsa for salsa verde for a different flavor.
Leftovers can be used in quesadillas, burrito bowls, or taco salads.
To crisp the shredded chicken, spread it on a baking sheet and broil for 4–5 minutes.
