Ingredients
2 boneless, skinless chicken breasts
1 tbsp olive oil
1 tsp smoked paprika
1 tsp garlic powder
1/2 tsp cumin
Salt and pepper to taste
1 mango, diced
1/4 red onion, finely chopped
1/2 jalapeño, minced
1/4 cup cilantro, chopped
Juice of 1 lime
8 corn tortillas
Optional: sliced avocado, shredded lettuce, cotija cheese
Instructions
1. Slice chicken breasts in half lengthwise.
2. Season both sides with spices and olive oil.
3. Heat a skillet over medium and cook chicken until golden.
4. Set aside to rest, then slice thinly.
5. In a bowl, mix mango, onion, jalapeño, cilantro, lime juice, and salt.
6. Warm tortillas in a dry pan until soft.
7. Assemble tacos: tortilla, lettuce, chicken, mango salsa.
8. Top with avocado, cheese, or extra cilantro if desired.
Notes
Use thighs instead of breasts for extra richness.
Store components separately for best freshness.
