Description

Ingredients

  • Lasagna noodles
  • Butternut squash, peeled and cubed
  • Fresh spinach
  • Ricotta cheese
  • Mozzarella cheese, shredded
  • Parmesan cheese, grated
  • Garlic, minced
  • Onion, chopped
  • Olive oil
  • Salt
  • Pepper
  • Nutmeg
  • Vegetable broth

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium heat and sauté the chopped onion and minced garlic until fragrant.
  3. Add cubed butternut squash and cook until tender. Season with salt, pepper, and a pinch of nutmeg.
  4. Stir in fresh spinach and cook until just wilted.
  5. Spread some vegetable broth at the bottom of a baking dish. Layer lasagna noodles, followed by the butternut squash and spinach mixture, ricotta cheese, and mozzarella cheese. Repeat the layers until all ingredients are used, finishing with a layer of noodles topped with mozzarella and Parmesan.
  6. Cover with foil and bake for 30 minutes.
  7. Remove the foil and bake for an additional 15 minutes or until the cheese is bubbly and golden.
  8. Let cool for a few minutes before slicing and serving.
