Ingredients
- Lasagna noodles
- Butternut squash, peeled and cubed
- Fresh spinach
- Ricotta cheese
- Mozzarella cheese, shredded
- Parmesan cheese, grated
- Garlic, minced
- Onion, chopped
- Olive oil
- Salt
- Pepper
- Nutmeg
- Vegetable broth
Instructions
- Preheat your oven to 375°F (190°C).
- Heat olive oil in a large skillet over medium heat and sauté the chopped onion and minced garlic until fragrant.
- Add cubed butternut squash and cook until tender. Season with salt, pepper, and a pinch of nutmeg.
- Stir in fresh spinach and cook until just wilted.
- Spread some vegetable broth at the bottom of a baking dish. Layer lasagna noodles, followed by the butternut squash and spinach mixture, ricotta cheese, and mozzarella cheese. Repeat the layers until all ingredients are used, finishing with a layer of noodles topped with mozzarella and Parmesan.
- Cover with foil and bake for 30 minutes.
- Remove the foil and bake for an additional 15 minutes or until the cheese is bubbly and golden.
- Let cool for a few minutes before slicing and serving.
