Description
A refreshing and effortless salad with crisp cucumbers and a smooth, tangy dressing. Ready in under 15 minutes, perfect for weeknights, meal prep, or gatherings, it pairs well with grilled chicken, fish, and more.
Ingredients
2 large cucumbers, thinly sliced
1 small red onion, thinly sliced
1 cup plain Greek yogurt
2 tablespoons fresh dill, chopped
1 tablespoon fresh chives, chopped (optional)
1 tablespoon white vinegar
1 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 tablespoon fresh lemon juice (optional)
Instructions
Thinly slice cucumbers and red onion, then pat dry with paper towels to remove moisture
In a large bowl, combine Greek yogurt, dill, chives (if using), vinegar, sugar, salt, pepper, and lemon juice
Mix thoroughly until the dressing is smooth and well-blended
Pour the dressing over the cucumbers and onions, toss to combine uniformly
Let the salad sit for 5-10 minutes at room temperature for flavors to meld
Serve chilled or at room temperature
Notes
English or Persian cucumbers yield the best texture; avoid standard cucumbers unless salted to reduce moisture
For a richer dressing, use sour cream in place of yogurt
Store leftovers in an airtight container in the refrigerator for up to 3 days
If Greek yogurt is unavailable, substitute with a halal-certified non-dairy yogurt for a vegetarian alternative
