Description

This creamy low carb chicken casserole is cozy, cheesy, and filling while keeping carbs low. Made with tender chicken, broccoli, and a smooth cheese sauce, it’s perfect for keto or low carb dinners that feel like comfort food without the pasta or rice.

3 cups cooked shredded chicken (rotisserie or leftover)

2 cups small broccoli florets, lightly steamed

1 cup cooked cauliflower rice or cooked spaghetti squash strands

4 ounces cream cheese, softened

1/2 cup sour cream

1/4 cup mayonnaise

1 cup shredded mozzarella cheese

1/2 cup shredded cheddar cheese

2 teaspoons garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked or regular paprika

1 teaspoon salt, or to taste

1/2 teaspoon black pepper

2 tablespoons chopped fresh parsley or chives for garnish


Instructions

1. Preheat oven to 350°F (175°C) and lightly grease a 9×13‑inch baking dish.

2. In a large bowl, whisk together softened cream cheese, sour cream, and mayonnaise until smooth.

3. Stir in garlic powder, onion powder, paprika, salt, and pepper. Taste and adjust seasoning as needed.

4. Add shredded chicken, broccoli, cauliflower rice or spaghetti squash, and half of the mozzarella and cheddar cheeses. Stir until evenly coated.

5. Transfer mixture to prepared baking dish and spread into an even layer.

6. Top with remaining mozzarella and cheddar cheese.

7. Bake for 25–30 minutes, until the casserole is hot in the center and cheese on top is melted and lightly golden.

8. Let rest for 5–10 minutes before serving. Garnish with fresh parsley or chives.

Notes

Use softened cream cheese to create a smooth, creamy sauce.

Don’t overcook the broccoli—steam it until just tender so it holds up during baking.

If the cheese topping browns too quickly, cover loosely with foil for the last 5 minutes of baking.

This casserole freezes well in single portions and reheats beautifully.

Try using gouda or pepper jack for a new flavor twist.
