Ingredients
2 tablespoons olive oil or unsalted butter
1 large onion, finely diced
3 cloves garlic, minced
4 medium russet potatoes, peeled and diced
3 cups vegetable broth or certified chicken broth
1/2 teaspoon smoked paprika
1/2 teaspoon dried thyme
Salt and freshly ground black pepper, to taste
1/2 cup Greek yogurt or sour cream
2 tablespoons lemon juice
Optional toppings: shredded cheddar cheese, green onions, beef strips (from cured beef or turkey slices), or a drizzle of olive oil
Instructions
1. In a large pot, heat olive oil or butter over medium heat.
2. Add the diced onion and sauté for 5 minutes until translucent.
3. Stir in minced garlic and cook for 1 more minute until fragrant.
4. Add the diced potatoes, smoked paprika, thyme, salt, and pepper. Stir to coat.
5. Pour in the broth and bring to a boil. Reduce heat and simmer for 20 minutes, or until potatoes are very tender.
6. Blend about half the soup with an immersion blender (or carefully in a standard blender), then return to the pot for a creamy base with some texture.
7. Stir in Greek yogurt or sour cream, followed by the lemon juice for brightness.
8. Taste and adjust seasoning. Serve warm with optional toppings.

Use Greek yogurt for a lighter, protein-rich finish.
Always add lemon juice after cooking to preserve brightness.
Freeze before adding yogurt for best texture when reheated.
