Description

Enjoy these delicious Crispy Chicken Sandwich Deluxe, perfect for lunch or a quick dinner with family and friends.


Ingredients

  • 3 medium chicken breasts (boneless, skinless, halved into 6 cutlets)
  • 1 1/2 cups low-fat buttermilk
  • 1 Tbsp hot sauce (Frank’s Red Hot brand)
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 1/2 cups all-purpose flour
  • 2 tsp salt
  • 1 tsp black pepper (freshly ground)
  • 1 tsp baking powder
  • 1 tsp paprika
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • Oil for frying (vegetable oil, canola oil, or peanut oil)
  • 6 burger buns (buttered and toasted)
  • 6 green lettuce leaves
  • 1 large tomato (sliced)
  • 2 dill pickles (sliced into rings)
  • Mayonnaise (or your favorite sauce)

Instructions

  1. Pound chicken cutlets between 2 sheets of plastic wrap to an even 1/2” thickness.
  2. In a bowl, mix buttermilk, hot sauce, 1 tsp salt, 1 tsp black pepper, onion powder, and garlic powder. Coat the chicken in this marinade and let it sit in the fridge for 2-4 hours.
  3. In another bowl, whisk together flour, 2 tsp salt, 1 tsp black pepper, baking powder, paprika, onion powder, and garlic powder.
  4. Coat the marinated chicken with the flour mixture. Let it sit for a bit so the coating firms up.
  5. Heat about 1 inch of oil in a skillet to 350°F.
  6. Just before frying, double coat the chicken in the flour mixture to create a thick crust.
  7. Fry chicken pieces, 2 at a time, adjusting the heat to keep the oil temperature between 300-325°F. Fry for 3-4 minutes on each side until cooked through.
  8. Transfer the cooked chicken to a wire rack to drain and stay crispy.
  9. Toast the buns. Spread mayonnaise or your sauce of choice on the buns.
  10. Layer lettuce, tomato, pickles, and the fried chicken on the buns. Serve warm.

Notes

Make sure to marinate the chicken long enough for better flavor and tenderness. Use a thermometer to check the oil temperature for perfect crispiness.
