- 3 medium chicken breasts (boneless, skinless, halved into 6 cutlets)
- 1 1/2 cups low-fat buttermilk
- 1 Tbsp hot sauce (Frank’s Red Hot brand)
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 1/2 cups all-purpose flour
- 2 tsp salt
- 1 tsp black pepper (freshly ground)
- 1 tsp baking powder
- 1 tsp paprika
- 1 tsp onion powder
- 1 tsp garlic powder
- Oil for frying (vegetable oil, canola oil, or peanut oil)
- 6 burger buns (buttered and toasted)
- 6 green lettuce leaves
- 1 large tomato (sliced)
- 2 dill pickles (sliced into rings)
- Mayonnaise (or your favorite sauce)
Instructions
- Pound chicken cutlets between 2 sheets of plastic wrap to an even 1/2” thickness.
- In a bowl, mix buttermilk, hot sauce, 1 tsp salt, 1 tsp black pepper, onion powder, and garlic powder. Coat the chicken in this marinade and let it sit in the fridge for 2-4 hours.
- In another bowl, whisk together flour, 2 tsp salt, 1 tsp black pepper, baking powder, paprika, onion powder, and garlic powder.
- Coat the marinated chicken with the flour mixture. Let it sit for a bit so the coating firms up.
- Heat about 1 inch of oil in a skillet to 350°F.
- Just before frying, double coat the chicken in the flour mixture to create a thick crust.
- Fry chicken pieces, 2 at a time, adjusting the heat to keep the oil temperature between 300-325°F. Fry for 3-4 minutes on each side until cooked through.
- Transfer the cooked chicken to a wire rack to drain and stay crispy.
- Toast the buns. Spread mayonnaise or your sauce of choice on the buns.
- Layer lettuce, tomato, pickles, and the fried chicken on the buns. Serve warm.
Notes
Make sure to marinate the chicken long enough for better flavor and tenderness. Use a thermometer to check the oil temperature for perfect crispiness.
