Description

A delicious and healthy power bowl featuring crispy Halloumi cheese, fresh vegetables, and quinoa, perfect for lunch or dinner.


Ingredients

  • 200g Halloumi cheese
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • 1 cup cooked quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/4 cup Kalamata olives, pitted
  • Fresh parsley for garnish

Instructions

  1. Place a non-stick skillet over medium heat and warm it up thoroughly.
  2. Cut the Halloumi cheese into thick, even slices.
  3. Add the Halloumi slices to the skillet and fry for about 2-3 minutes on each side until golden brown.
  4. In a large bowl, mix quinoa, cherry tomatoes, cucumber, red onion, and Kalamata olives.
  5. In a small bowl, whisk olive oil, lemon juice, salt, and pepper.
  6. Pour the dressing over the quinoa mixture and toss gently.
  7. Arrange crispy Halloumi slices over the salad and garnish with parsley.
