- 200g Halloumi cheese
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
- 1 cup cooked quinoa
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/4 cup Kalamata olives, pitted
- Fresh parsley for garnish
Instructions
- Place a non-stick skillet over medium heat and warm it up thoroughly.
- Cut the Halloumi cheese into thick, even slices.
- Add the Halloumi slices to the skillet and fry for about 2-3 minutes on each side until golden brown.
- In a large bowl, mix quinoa, cherry tomatoes, cucumber, red onion, and Kalamata olives.
- In a small bowl, whisk olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the quinoa mixture and toss gently.
- Arrange crispy Halloumi slices over the salad and garnish with parsley.
