Ingredients

2 lbs boneless, skinless chicken breasts (or thighs)

1 tbsp olive oil or butter

3 cloves garlic, minced

½ cup chicken broth

1 cup heavy cream

½ cup grated Parmesan cheese

½ cup chopped sun-dried tomatoes (packed in oil)

1 tsp Italian seasoning

½ tsp red pepper flakes (optional)

Salt and black pepper, to taste

Fresh basil or parsley, for garnish

(Optional) ½ cup baby spinach

(Optional) 1 tbsp cornstarch + 1 tbsp water (slurry)

Pasta, rice, or mashed potatoes for serving


Instructions

1. Heat olive oil in a skillet over medium-high heat. Season chicken with salt and pepper, then sear for 2–3 minutes per side until golden.

2. Whisk together broth, cream, Parmesan, garlic, Italian seasoning, and red pepper flakes in the crockpot.

3. Stir in sun-dried tomatoes, then place the seared chicken into the sauce.

4. Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours, until chicken is tender.

5. (Optional) Mix cornstarch and water, stir into sauce during the last 20 minutes to thicken.

6. Garnish with chopped basil or parsley.

7. Serve over pasta, mashed potatoes, or rice.

Notes

Use thighs for extra tenderness.

Add spinach or mushrooms in the last hour for a veggie boost.

Don’t skip the sear it adds deep flavor!

Freshly grated Parmesan works best.
