- 1 lb boneless skinless chicken thighs
- 1 tbsp olive oil
- 1 tbsp lime juice
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper to taste
- 8 small corn tortillas
- 1/2 cup diced onion
- 1/2 cup chopped fresh cilantro
- Lime wedges for serving
Instructions
- Combine olive oil, lime juice, and spices in a mixing bowl. Mix well.
- Add chicken thighs to the marinade and coat thoroughly. Allow to marinate for at least 15 minutes.
- Heat a cast iron skillet or grill over medium-high heat. Cook chicken for 6–7 minutes per side until fully cooked and charred.
- Let the chicken rest for a few minutes before chopping into bite-sized pieces.
- Warm tortillas on the skillet or flame until pliable.
- Assemble tacos by filling tortillas with chopped chicken, diced onion, cilantro, and a squeeze of lime.
