Description

Ingredients

  • 1 lb boneless skinless chicken thighs
  • 1 tbsp olive oil
  • 1 tbsp lime juice
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste
  • 8 small corn tortillas
  • 1/2 cup diced onion
  • 1/2 cup chopped fresh cilantro
  • Lime wedges for serving

Instructions

  1. Combine olive oil, lime juice, and spices in a mixing bowl. Mix well.
  2. Add chicken thighs to the marinade and coat thoroughly. Allow to marinate for at least 15 minutes.
  3. Heat a cast iron skillet or grill over medium-high heat. Cook chicken for 6–7 minutes per side until fully cooked and charred.
  4. Let the chicken rest for a few minutes before chopping into bite-sized pieces.
  5. Warm tortillas on the skillet or flame until pliable.
  6. Assemble tacos by filling tortillas with chopped chicken, diced onion, cilantro, and a squeeze of lime.
