A quick and nourishing breakfast featuring toasted bread topped with mashed avocado and eggs.
Ingredients

- 2 slices of bread
- 2 eggs
- 1 avocado
- Salt to taste
- Pepper to taste
- Optional toppings: hot sauce, cheese, or herbs
Instructions
- Begin by toasting the bread slices until golden brown.
- While the bread is toasting, heat a non-stick pan over medium heat.
- Crack the eggs into the pan and cook sunny-side up or scrambled, as preferred.
- While the eggs are cooking, cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash with a fork, adding salt and pepper.
- Once the bread is toasted and the eggs are cooked, spread the mashed avocado on each slice of bread.
- Place the cooked eggs on top of the avocado toast.
- Add any optional toppings you prefer and serve immediately.
Notes
Use ripe avocados for better flavor. For added nutrition, top with sliced tomatoes or spinach. You can also make this a breakfast burrito by adding the toppings to a whole wheat tortilla.
