Description

A quick and nourishing breakfast featuring toasted bread topped with mashed avocado and eggs.


Ingredients

  • 2 slices of bread
  • 2 eggs
  • 1 avocado
  • Salt to taste
  • Pepper to taste
  • Optional toppings: hot sauce, cheese, or herbs

Instructions

  1. Begin by toasting the bread slices until golden brown.
  2. While the bread is toasting, heat a non-stick pan over medium heat.
  3. Crack the eggs into the pan and cook sunny-side up or scrambled, as preferred.
  4. While the eggs are cooking, cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash with a fork, adding salt and pepper.
  5. Once the bread is toasted and the eggs are cooked, spread the mashed avocado on each slice of bread.
  6. Place the cooked eggs on top of the avocado toast.
  7. Add any optional toppings you prefer and serve immediately.

Notes

Use ripe avocados for better flavor. For added nutrition, top with sliced tomatoes or spinach. You can also make this a breakfast burrito by adding the toppings to a whole wheat tortilla.
