Quick and easy chicken quesadillas that are customizable and perfect for any occasion.

- 4 Flour tortillas (10-inch)
- 2 cups Cooked chicken breast, shredded
- 1½ cups Mexican cheese blend, shredded
- ½ cup Monterey Jack cheese, shredded
- 1 medium Bell pepper, diced
- ½ medium Red onion, finely diced
- 2 tablespoons Olive oil or butter
- 1 teaspoon Chili powder
- ½ teaspoon Cumin
- ½ teaspoon Garlic powder
- Salt and black pepper to taste
Instructions
- In a bowl, season the shredded chicken with chili powder, cumin, garlic powder, salt, and pepper. Mix well until the chicken is fully coated with the spices.
- Dice the bell pepper and red onion into small, even pieces.
- Heat one tablespoon of oil or butter in a skillet over medium heat.
- Place a tortilla in the pan. Sprinkle cheese on one half, then add the seasoned chicken, diced vegetables, and more cheese on top.
- Fold the tortilla in half and cook for 3 to 4 minutes per side until it is golden and crispy.
- Let the quesadilla rest briefly on a plate before slicing it into wedges.
Notes
Serve hot with salsa, guacamole, or sour cream. You can also add fresh cilantro or lime wedges for extra flavor.
