Description

Quick and easy chicken quesadillas that are customizable and perfect for any occasion.


Ingredients

  • 4 Flour tortillas (10-inch)
  • 2 cups Cooked chicken breast, shredded
  • 1½ cups Mexican cheese blend, shredded
  • ½ cup Monterey Jack cheese, shredded
  • 1 medium Bell pepper, diced
  • ½ medium Red onion, finely diced
  • 2 tablespoons Olive oil or butter
  • 1 teaspoon Chili powder
  • ½ teaspoon Cumin
  • ½ teaspoon Garlic powder
  • Salt and black pepper to taste

Instructions

  1. In a bowl, season the shredded chicken with chili powder, cumin, garlic powder, salt, and pepper. Mix well until the chicken is fully coated with the spices.
  2. Dice the bell pepper and red onion into small, even pieces.
  3. Heat one tablespoon of oil or butter in a skillet over medium heat.
  4. Place a tortilla in the pan. Sprinkle cheese on one half, then add the seasoned chicken, diced vegetables, and more cheese on top.
  5. Fold the tortilla in half and cook for 3 to 4 minutes per side until it is golden and crispy.
  6. Let the quesadilla rest briefly on a plate before slicing it into wedges.

Notes

Serve hot with salsa, guacamole, or sour cream. You can also add fresh cilantro or lime wedges for extra flavor.
