- 2 cups cooked chicken, shredded
- 1 packet ranch seasoning mix
- 8 ounces cream cheese, softened
- 1 cup chicken broth
- 1 cup shredded cheese (cheddar or mozzarella)
- 1 cup spinach (optional)
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- In a large pot, cook the gnocchi according to package instructions. Drain and set aside.
- Add shredded chicken, ranch seasoning, cream cheese, and chicken broth. Cook over medium heat until the cream cheese is melted and mixture is smooth.
- Stir in the shredded cheese and spinach, and cook until the spinach wilts and cheese is melted.
- Add the cooked gnocchi to the mixture and stir until well combined.
- Season with salt and pepper to taste.
- Serve warm, garnished with chopped green onions.
