Delicious and nutritious patties made with sweet potatoes and red lentils, perfect for any meal.
Ingredients

- 2 medium sweet potatoes, peeled and cubed
- 1 cup red lentils, rinsed
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon coriander
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1/4 cup fresh cilantro, chopped
Instructions
- Begin by peeling and cubing the sweet potatoes. Rinse and drain the red lentils. Chop the onion and mince the garlic.
- Boil the sweet potatoes in a pot until fork-tender, about 10–15 minutes. In another pot, cook the lentils according to package instructions until soft. Drain well.
- Combine the cooked sweet potatoes, lentils, onion, garlic, cumin, coriander, salt, and pepper in a large mixing bowl. Use a fork or potato masher to mash the mixture until well combined but still chunky.
- Heat olive oil in a skillet over medium heat. Form the mixture into patties and place them in the skillet. Cook for about 4–5 minutes on each side or until golden brown.
- Remove from the skillet and let drain on paper towels before serving warm.
Notes
Try pairing with a fresh cucumber and tomato salad, or serve on a bed of greens or in pita with yogurt.
