Description

These French profiteroles are light, airy, and full of smooth vanilla cream. The chocolate ganache on top makes them rich and elegant. They look fancy but are simple to prepare at home. They are great for parties or any time you want a special dessert.


Ingredients

Choux Pastry:

1 cup water

1/2 cup unsalted butter

1/4 teaspoon salt

1 cup all-purpose flour

4 large eggs, room temperature

Vanilla Cream Filling:

2 cups whole milk

1/2 cup granulated sugar

4 large egg yolks

1/4 cup cornstarch

2 teaspoons alcohol-free vanilla extract

1 cup heavy cream, whipped

Chocolate Ganache:

8 ounces dark chocolate, chopped

1 cup heavy cream


Instructions

1. Preheat oven to 400°F (200°C). Line two baking sheets with parchment paper.

2. In a saucepan, heat water, butter, and salt until boiling.

3. Remove from heat. Add flour and stir until a smooth dough forms.

4. Return to stove. Cook 1–2 minutes to dry the dough slightly.

5. Transfer to a bowl. Let cool for 5 minutes.

6. Add eggs one at a time, mixing well until smooth and glossy.

7. Pipe 1.5-inch mounds onto baking sheets.

8. Bake 20–25 minutes until puffed and golden. Do not open oven door.

9. Pierce each puff to release steam. Cool completely.

13. Whisk sugar, yolks, and cornstarch in a bowl.
