These no-bake lemon oatmeal cookies are soft, chewy, and full of citrusy flavor. Made with only 3 ingredients and no oven, they’re the perfect quick treat!
Ingredients
1 cup white chocolate chips
2 tablespoons fresh lemon juice
2 teaspoons lemon zest
1/2 cup plus 2 tablespoons quick oats
Instructions
1. Line a large baking sheet with parchment paper to prevent the cookies from sticking.
2. Place the white chocolate chips in a large microwave-safe bowl. Heat them in 15-30 second intervals, stirring in between, until melted and smooth.
3. Whisk the lemon juice into the melted chocolate until smooth and uniform.
4. Stir in the lemon zest and quick oats with a spatula until the batter is thick and evenly combined.
5. Scoop tablespoon-sized portions onto the prepared baking sheet, spacing them about 2 inches apart.
6. Flatten each cookie into a round disk using the back of a spoon or your fingers.
7. Place the baking sheet in the refrigerator for 30 to 60 minutes until the cookies are firm and set.

• Use fresh lemon juice and zest for the best flavor.
• If using old-fashioned oats, pulse them in a food processor for better texture.
• Do not overheat white chocolate melt gently and stir frequently.
