- 2 cups Baby Spinach (Finely chopped; kale can be substituted)
- 1 cup Shredded Mozzarella Cheese (Feta for a tangier flavor)
Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the cottage cheese, olive oil, and egg. Mix well until smooth.
- Add the all-purpose flour, baking powder, and salt to the mixture. Stir until combined.
- Fold in the chopped spinach and shredded mozzarella cheese until evenly distributed.
- Use your hands to form the dough into bagel shapes on the prepared baking sheet.
- Bake for 20-25 minutes or until they are golden brown on top.
- Remove from the oven and let them cool slightly before serving.
Notes
