Description

Fluffy and adorable mini German pancakes baked in muffin tins, perfect for brunch with customizable toppings.


Ingredients

Scale
  • 1 cup of milk
  • 1 cup of all-purpose flour
  • 6 large eggs
  • 1/4 cup of granulated sugar
  • 1/2 teaspoon of vanilla extract
  • 1/4 teaspoon of salt
  • 1/4 cup of unsalted butter, melted
  • Vanilla sugar (for dusting)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Grease a muffin tin with butter or non-stick spray.
  3. In a large bowl, whisk together milk, flour, eggs, sugar, vanilla extract, and salt until smooth.
  4. Add melted butter and mix until fully combined.
  5. Pour the batter into muffin cups, filling each one about halfway.
  6. Bake for 12–15 minutes or until puffed and golden brown.
  7. Let cool slightly, then dust with vanilla sugar and serve warm.

Notes

Store in an airtight container for up to 3 days. Reheat in the microwave for 20–30 seconds or in the oven at 300°F (150°C) for 5–7 minutes.
