A delightful appetizer featuring caramelized onions and Gruyère cheese atop toasted baguette slices.

- 1 large baguette
- 4 large yellow onions
- 4 tablespoons unsalted butter
- 1 tablespoon olive oil
- 2 teaspoons balsamic vinegar
- 1 tablespoon fresh thyme leaves
- 2 cups shredded Gruyère cheese
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Thinly slice the onions.
- In a large skillet, melt butter with olive oil over medium-low heat.
- Add the onions and salt, stirring occasionally for 30-40 minutes until they are deeply golden and caramelized.
- Stir in the balsamic vinegar and fresh thyme. Cook until the mixture becomes sticky and jam-like, then remove from heat.
- Preheat the oven to 400°F.
- Slice the baguette on the bias and arrange the slices on a baking sheet.
- Toast the baguette slices for 6-8 minutes until the tops are lightly crisp.
- Top each toast with the caramelized onions and shredded Gruyère.
- Broil for 2-3 minutes, until the cheese is bubbly and golden.
- Sprinkle with more thyme before serving. Serve immediately while hot.
Notes
Best enjoyed fresh out of the oven. Can pair with a side salad or a glass of wine.
