- 4 chicken breasts
- 8 oz fresh mozzarella
- 2 tomatoes, sliced
- 1 cup fresh basil
- 2 tbsp olive oil
- 2 tbsp balsamic glaze
- Salt to taste
- Pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Marinate the chicken breasts in olive oil, salt, and pepper for at least 30 minutes.
- Make a series of deep cuts in the chicken breasts to create a pocket (hasselback).
- Stuff each chicken breast with slices of fresh mozzarella, tomato, and basil leaves.
- Place the stuffed chicken in a baking dish and drizzle with balsamic glaze.
- Bake for about 25-30 minutes or until the chicken is cooked through.
- Serve warm, garnished with additional basil if desired.
Notes
Pairs well with crispy garlic bread, a fresh garden salad, or steamed rice/quinoa. Store leftovers in the fridge for 3-4 days, or freeze for up to 3 months.
