Description

A delightful dish featuring chicken breasts stuffed with fresh mozzarella, tomato slices, and aromatic basil, drizzled with balsamic glaze.


Ingredients

  • 4 chicken breasts
  • 8 oz fresh mozzarella
  • 2 tomatoes, sliced
  • 1 cup fresh basil
  • 2 tbsp olive oil
  • 2 tbsp balsamic glaze
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Marinate the chicken breasts in olive oil, salt, and pepper for at least 30 minutes.
  3. Make a series of deep cuts in the chicken breasts to create a pocket (hasselback).
  4. Stuff each chicken breast with slices of fresh mozzarella, tomato, and basil leaves.
  5. Place the stuffed chicken in a baking dish and drizzle with balsamic glaze.
  6. Bake for about 25-30 minutes or until the chicken is cooked through.
  7. Serve warm, garnished with additional basil if desired.

Notes

Pairs well with crispy garlic bread, a fresh garden salad, or steamed rice/quinoa. Store leftovers in the fridge for 3-4 days, or freeze for up to 3 months.
