Instructions
- In a large pot, heat a bit of oil over medium heat.
- Add the ginger and garlic, sautéing until fragrant.
- Add the chicken and cook until browned.
- Pour in the chicken broth and bring to a simmer.
- Add the carrots and celery, cooking until tender.
- Stir in the noodles and soy sauce, cooking until the noodles are tender.
- Season with salt and pepper to taste.
- Serve hot, garnished with scallions.

For added flavor, use homemade chicken broth. You can replace chicken with shrimp or tofu, or add extra vegetables like spinach or mushrooms.
