- 2 cups potatoes, diced
- 1/4 cup soy sauce
- 2 tablespoons honey
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste

- Fresh herbs for garnish (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix soy sauce, honey, olive oil, minced garlic, salt, and pepper to make the glaze.
- Place chicken breasts in a baking dish and pour the glaze over them.
- Toss the diced potatoes in olive oil, salt, and pepper and arrange them around the chicken in the baking dish.
- Bake for 25-30 minutes until the chicken is cooked through and potatoes are tender.
- Meanwhile, steam or sauté your choice of vegetables.
- Once cooked, allow to cool slightly, then portion out into meal prep containers with chicken, potatoes, and vegetables.
- Garnish with fresh herbs before storing.
Notes
Use even-sized chicken breasts for steady cooking. Cut potatoes small so they cook in the same time as the chicken. Pat the chicken dry so the glaze sticks well. Check the chicken with a meat thermometer if you want exact doneness (165°F / 74°C). Let food cool before sealing containers to avoid soggy veggies.
