A savory Greek-inspired white pizza topped with roasted garlic, sautéed spinach, and a creamy ricotta base, all on a crisp crust.

- 1 pre-made pizza crust (store-bought or homemade)
- 1 medium head of garlic
- 2 tablespoons olive oil
- 1 cup fresh spinach, chopped
- 1 cup ricotta cheese
- 1 cup mozzarella cheese, shredded
- ½ cup feta cheese, crumbled
- ¼ cup grated Parmesan cheese
- 1 teaspoon dried oregano
- Crushed red pepper flakes (to taste)
- Salt and pepper
- Fresh basil (for garnish)
Instructions
- Roast the garlic: Slice off the top of the garlic head, drizzle with olive oil, wrap in foil, and roast at 400°F (200°C) for 30–35 minutes. Cool, then squeeze out the soft cloves into a bowl.
- Sauté the spinach: Heat 1 tbsp olive oil in a skillet, sauté chopped spinach until wilted (2–3 minutes). Season with salt and pepper.
- Make the white base: Mash the roasted garlic, mix with ricotta, half the mozzarella, oregano, salt, and pepper.
- Assemble the pizza: Spread the garlic-ricotta mix on the crust, add spinach, top with remaining mozzarella, crumbled feta, and Parmesan. Add red pepper flakes if desired.
- Bake: Place in a 400°F oven for 15–20 minutes, until golden and bubbly.
- Garnish & serve: Add fresh basil leaves, slice, and enjoy!
Notes
Store leftovers in an airtight container for up to 3 days. Reheat in the oven for best results.
