Ingredients

- 2 poached chicken breasts, shredded
- 4 cups chicken broth
- 2 carrots, diced
- 2 celery stalks, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- Fresh herbs (parsley or dill) for garnish
Instructions
- In a large pot, heat a little oil over medium heat. Add onions, carrots, celery, and garlic; sauté until vegetables are tender.
- Add the chicken broth, poached chicken, thyme, rosemary, salt, and pepper. Bring to a boil.
- Reduce heat and let it simmer for 20 minutes.
- Adjust seasoning as needed.
- Serve hot, garnished with fresh herbs.
Notes
For a heartier soup, consider stirring in cooked rice or small pasta just before serving.
