Description

A light and comforting chicken soup that’s easy to make and perfect for family meals or when you’re under the weather.


Ingredients

  • 2 poached chicken breasts, shredded
  • 4 cups chicken broth
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Fresh herbs (parsley or dill) for garnish

Instructions

  1. In a large pot, heat a little oil over medium heat. Add onions, carrots, celery, and garlic; sauté until vegetables are tender.
  2. Add the chicken broth, poached chicken, thyme, rosemary, salt, and pepper. Bring to a boil.
  3. Reduce heat and let it simmer for 20 minutes.
  4. Adjust seasoning as needed.
  5. Serve hot, garnished with fresh herbs.

Notes

For a heartier soup, consider stirring in cooked rice or small pasta just before serving.
