Ingredients

- 2 cups of cooked quinoa
- 1 cup of black beans, rinsed and drained
- 1 cup of diced bell peppers (any color)
- 1 cup of corn (fresh or frozen)
- 1 teaspoon of cumin
- 1 teaspoon of chili powder
- Salt and pepper to taste
- Fresh cilantro or parsley for garnish
- 1 tablespoon of olive oil
Instructions
- In a large skillet, heat the olive oil over medium heat.
- Add the diced bell peppers and corn to the skillet, sautéing for about 5 minutes until soft.
- Stir in the cooked quinoa and black beans.
- Add the cumin, chili powder, salt, and pepper. Mix everything well to combine.
- Cook for another 5 minutes until heated through.
- Remove from heat and garnish with fresh cilantro or parsley.
Notes
