Description

Ingredients

  • 2 cups of cooked quinoa
  • 1 cup of black beans, rinsed and drained
  • 1 cup of diced bell peppers (any color)
  • 1 cup of corn (fresh or frozen)
  • 1 teaspoon of cumin
  • 1 teaspoon of chili powder
  • Salt and pepper to taste
  • Fresh cilantro or parsley for garnish
  • 1 tablespoon of olive oil

Instructions

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the diced bell peppers and corn to the skillet, sautéing for about 5 minutes until soft.
  3. Stir in the cooked quinoa and black beans.
  4. Add the cumin, chili powder, salt, and pepper. Mix everything well to combine.
  5. Cook for another 5 minutes until heated through.
  6. Remove from heat and garnish with fresh cilantro or parsley.

Notes
