Description

Delicious and healthy lentil patties served with a tangy lemon tahini dip, perfect for busy weeknights or meal prep.


Ingredients

  • 1 cup cooked lentils
  • 1/2 cup breadcrumbs
  • 1/4 cup grated carrot
  • 1/4 cup chopped onion
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 lemon (for tahini dip)
  • 1/4 cup tahini
  • Water as needed

Instructions

  1. Combine cooked lentils, breadcrumbs, grated carrot, chopped onion, minced garlic, cumin, salt, and pepper in a mixing bowl.
  2. Mix well until everything is combined.
  3. Form the mixture into small patties.
  4. Heat olive oil in a skillet over medium heat and cook the patties until golden brown on each side, about 3-4 minutes per side.
  5. Mix tahini and lemon juice together in a bowl, adding water to reach desired consistency for the dip.
  6. Serve lentil patties warm with the lemon tahini dip on the side.

Notes

These patties are freezer-friendly. Store in an airtight container for up to 3-4 days in the fridge or freeze for up to 3 months.
