Description

Quick and easy oatmeal cookies that are naturally sweetened and perfect for busy mornings.


Ingredients

  • 2 cups rolled oats
  • 1 ripe banana, mashed
  • 1/2 cup nut butter (almond or peanut butter)
  • 1/4 cup honey or maple syrup
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 cup chocolate chips or dried fruit (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the rolled oats, mashed banana, nut butter, honey or maple syrup, salt, and cinnamon. Stir until well combined, then fold in chocolate chips or dried fruit if using.
  3. Scoop tablespoon-sized portions onto the baking sheet and flatten slightly with the back of a spoon.
  4. Bake for 10 to 12 minutes, or until the edges are lightly golden.
  5. Let the cookies cool on a wire rack before enjoying or storing for later.

Notes

Use ripe bananas for better sweetness and texture. You can customize with various mix-ins like nuts or dried fruits.
