Description

Soft and fluffy bread rolls with a gentle sweetness, perfect for dinner or as a snack.


Ingredients

Scale
  • 4 cups all-purpose flour (plus more for dusting)
  • 3 teaspoons instant yeast
  • ¾ cup granulated sugar
  • 6 tablespoons unsalted butter (softened)
  • 2 whole eggs (room temperature)
  • ½ cup pineapple juice
  • ½ cup whole milk (lukewarm)
  • ¾ teaspoon salt
  • 2 teaspoons vanilla extract
  • 1 tablespoon unsalted butter (melted)
  • 1 whole egg (for egg wash)
  • 2 teaspoons milk (for egg wash)
  • 2 tablespoons unsalted butter (melted for brushing)

Instructions

  1. In a stand mixer, combine the all-purpose flour, sugar, instant yeast, and salt. Mix with a whisk until just combined.
  2. Create a well in the center of the dry ingredients and add the eggs, pineapple juice, milk, and vanilla extract. Using a hook attachment, knead on low speed for 5 minutes.
  3. Gradually add the softened butter while mixing, and continue for 2 more minutes until the dough comes together.
  4. Transfer the dough to a greased bowl, cover with cling wrap, and allow it to proof for 1½ to 2 hours until it has doubled in size.
  5. Once the dough has risen, punch it down and transfer it to a floured surface. Divide the dough into 15 equal-sized balls and line them in a 9 x 13 baking dish, arranged in 5 rows of 3.
  6. Cover the rolls and let them rest for at least another hour until they double in size.
  7. Preheat the oven to 350°F (175°C). Brush the dough balls with the egg wash mixture and place the baking tray in the oven.
  8. Bake for 22-25 minutes until the tops are golden.
  9. Once they are out of the oven, brush them with melted butter. Allow them to cool for at least 5-7 minutes before serving.

Notes

Best served warm with butter, honey, or jam. Store in an airtight container for a few days or freeze for longer storage.
