Description

A delightful and practical dish capturing the essence of sushi in an easy-to-make format, perfect for busy weeknights or meal prep.


Ingredients

Scale
  • 1 cup sushi rice
  • 1 1/4 cups water
  • 1 cup imitation crab or cooked crab meat
  • 1 cucumber, sliced
  • 1 avocado, sliced
  • 2 green onions, chopped
  • Soy sauce, for serving
  • Pickled ginger, for serving
  • Wasabi, for serving

Instructions

  1. Rinse the sushi rice under cold water until the water runs clear.
  2. Combine the rice and water in a pot and bring to a boil.
  3. Once boiling, reduce the heat to low, cover, and simmer for 20 minutes.
  4. Remove from heat and let sit, covered, for 10 minutes.
  5. In a bowl, fluff the rice with a fork.
  6. In serving bowls, layer the sushi rice, crab, cucumber, avocado, and green onions.
  7. Serve with soy sauce, pickled ginger, and wasabi on the side.
