- 2 medium zucchinis (sliced)
- 1 cup spinach (chopped)
- 1 red bell pepper (diced)
- 1 cup cherry tomatoes (halved)
- 1 cup cottage cheese (fresh, room temperature)
- 2 large eggs (beaten)
- 1 cup shredded mozzarella (divided)
- 1/2 cup grated Parmesan
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1/2 tsp garlic powder
- Salt and pepper, to taste
- Fresh basil or parsley (for garnish, chopped)
Instructions
- Preheat the oven to 375°F (190°C).
- Toss sliced zucchini, diced red bell pepper, and halved cherry tomatoes in olive oil, oregano, garlic powder, salt, and pepper. Spread them on a baking sheet and roast for 15 minutes.
- In a large mixing bowl, combine the cottage cheese, beaten eggs, and half of the shredded mozzarella. Stir until well blended and creamy.
- Grease a baking dish with olive oil. Start with a layer of roasted veggies, then pour the cottage cheese mixture evenly over them. Sprinkle the remaining mozzarella and grated Parmesan on top.
- Bake for 30-35 minutes, until the top is bubbly and golden brown.
- Let the dish rest for 10 minutes before serving. Finish with fresh basil or parsley.

You can customize the vegetables used and add protein such as grilled chicken or tofu for variation.
