Instructions

  1. Begin by letting the steak reach room temperature. Pat it dry and season generously with salt, pepper, and garlic.
  2. Heat a cast iron skillet over high heat until smoking hot for a perfect sear and a beautiful crust.
  3. Add avocado oil to the skillet, place your steak in, and listen for the sizzle!
  4. After flipping, add European butter, minced garlic, and herbs. Continuously spoon the melted butter over the steak.
  5. Aim for medium-rare at 130°F with a meat thermometer and feel a slight springiness.
  6. Let it rest for at least 5 minutes to redistribute juices.
  7. Mix softened butter with parsley, green onions, Dijon mustard, lemon juice, zest, and spices. Whisk until creamy.
