Description

A flavorful and creamy sauce with garlic, sun-dried tomatoes, and spinach, perfect for pasta, chicken, or as a dip.


Ingredients

  • 3 tbsp unsalted butter
  • 6 garlic cloves, minced
  • 1 small shallot, finely diced
  • 1/3 cup oil-packed sun-dried tomatoes, chopped
  • 1 1/2 cups heavy cream
  • 1/2 cup chicken or vegetable broth
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes (optional)
  • 2 cups fresh baby spinach
  • 3/4 cup freshly grated Parmesan cheese
  • 1 tbsp fresh basil, chopped

Instructions

  1. Melt the butter in a large skillet over medium heat.
  2. Sauté the shallot for about 2 minutes until it becomes translucent.
  3. Add the garlic and sun-dried tomatoes, cooking for another minute until fragrant.
  4. Pour in the cream and broth, stirring until combined, and bring to a simmer.
  5. Season with Italian seasoning, salt, pepper, and red pepper flakes. Let it simmer for 5 minutes to thicken slightly.
  6. Stir in the spinach until it’s wilted, which takes about 2 minutes.
  7. Remove from heat and gradually whisk in the Parmesan cheese until melted and smooth.
  8. Finish with fresh basil and adjust the seasoning if needed.

Notes

For a thicker sauce, let it simmer longer. You can customize this sauce by adding cooked chicken or shrimp, or using different vegetables.
