- 3 tbsp unsalted butter
- 6 garlic cloves, minced
- 1 small shallot, finely diced
- 1/3 cup oil-packed sun-dried tomatoes, chopped
- 1 1/2 cups heavy cream
- 1/2 cup chicken or vegetable broth
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp red pepper flakes (optional)
- 2 cups fresh baby spinach
- 3/4 cup freshly grated Parmesan cheese
- 1 tbsp fresh basil, chopped
Instructions
- Melt the butter in a large skillet over medium heat.
- Sauté the shallot for about 2 minutes until it becomes translucent.
- Add the garlic and sun-dried tomatoes, cooking for another minute until fragrant.
- Pour in the cream and broth, stirring until combined, and bring to a simmer.
- Season with Italian seasoning, salt, pepper, and red pepper flakes. Let it simmer for 5 minutes to thicken slightly.
- Stir in the spinach until it’s wilted, which takes about 2 minutes.
- Remove from heat and gradually whisk in the Parmesan cheese until melted and smooth.
- Finish with fresh basil and adjust the seasoning if needed.
Notes
For a thicker sauce, let it simmer longer. You can customize this sauce by adding cooked chicken or shrimp, or using different vegetables.
