Instructions
- In a large skillet, heat the olive oil over medium heat.
- Add the chopped onion and minced garlic, sautéing until onions are translucent.
- Add the diced zucchini and season with salt and pepper. Cook until the zucchini is tender, about 5-7 minutes.
- Pour in the heavy cream or coconut milk and stir to combine. Allow the sauce to simmer for a few minutes until slightly thickened.
- If desired, blend the mixture for a smoother consistency.
