Description

This warm and filling soup combines rich Italian sausage flavor with ditalini pasta and a creamy finish for a comforting meal.


Ingredients

  • 1 pound Italian sausage
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup ditalini pasta
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, cook the Italian sausage over medium heat until browned.
  2. Add the chopped onion and minced garlic; sauté until the onion is translucent.
  3. Pour in the chicken broth and diced tomatoes; bring to a boil.
  4. Add the ditalini pasta and cook according to package instructions.
  5. Reduce heat and stir in the heavy cream and Parmesan cheese.
  6. Season with salt and pepper.
  7. Serve hot, garnished with fresh parsley.

Notes

For a lighter soup, you can use half-and-half instead of heavy cream.
